Preparation

  1. Preheat the Oven:

    • Set your oven to 450°F (232°C).

    • Line a baking sheet with foil or parchment paper.

  2. Toss the Cauliflower:

    • In a large bowl, toss the cauliflower florets with the following ingredients:

      • Olive oil

      • Salt

      • Pepper

  3. Arrange on Baking Sheet:

    • Arrange the seasoned cauliflower florets on the prepared baking sheet.

    • Roast them for 15-20 minutes, until they are crisp-tender.

  4. Prepare the Cheese Sauce:

    • In a small saucepan over low heat (or a microwave-safe bowl), heat the following ingredients, stirring frequently, until smooth:

      • Cheddar cheese

      • Heavy cream

      • Almond milk

      • Butter

    • Be careful not to overheat.

  5. Combine Cauliflower and Cheese Sauce:

    • When the cauliflower is done roasting, transfer it to a large bowl.

    • Pour the cheese sauce over the cauliflower and gently fold the sauce into the cauliflower until evenly coated.
