Sunny Squash Casserole

Preparation

  1. Preheat the Oven:

    • Set your oven to 400°F (204°C).

    • Line a baking sheet with parchment paper.

  2. Toss the Squash Slices:

    • In a large bowl, toss the squash slices with the following ingredients:

      • Olive oil

      • 1/2 teaspoon sea salt

      • 1/4 teaspoon black pepper

  3. Roast the Squash Slices:

    • Place the squash slices in a single layer on the lined baking sheet.

    • Roast for 10-12 minutes, until they become tender.

  4. Layer the Roasted Squash:

    • Transfer the roasted squash to a 9x13 baking dish.

  5. Prepare the Cheese Sauce:

    • In a medium saucepan, combine the following ingredients:

      • 2 1/4 cups cheddar cheese

      • Heavy cream

      • Garlic

      • 1/4 teaspoon sea salt

      • 1/8 teaspoon pepper

    • Heat over medium heat until the mixture is melted and smooth.

  6. Pour the Sauce and Add Cheese:

    • Pour the cheese sauce over the squash in the baking dish.

    • Sprinkle the remaining 1/2 cup cheddar cheese on top.

  7. Bake until Bubbly and Golden:

    • Bake for 20-25 minutes, until the casserole starts to bubble.

    • Switch to broil for 2-3 minutes until the cheese is golden to your liking.


Serving size: 1/12 of entire casserole
