About the Recipe
Ingredients
3 lbs Yellow squash (sliced into 1/4 inch slices)
2 1/2 tbsp Olive oil
3/4 tsp Sea salt (divided)
3/8 tsp Black pepper (divided)
2 3/4 cup Cheddar cheese (shredded, divided)
3/4 cup Heavy cream
2 cloves Garlic (minced)
Preparation
Preheat the Oven:
Set your oven to 400°F (204°C).
Line a baking sheet with parchment paper.
Toss the Squash Slices:
In a large bowl, toss the squash slices with the following ingredients:
Olive oil
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Roast the Squash Slices:
Place the squash slices in a single layer on the lined baking sheet.
Roast for 10-12 minutes, until they become tender.
Layer the Roasted Squash:
Transfer the roasted squash to a 9x13 baking dish.
Prepare the Cheese Sauce:
In a medium saucepan, combine the following ingredients:
2 1/4 cups cheddar cheese
Heavy cream
Garlic
1/4 teaspoon sea salt
1/8 teaspoon pepper
Heat over medium heat until the mixture is melted and smooth.
Pour the Sauce and Add Cheese:
Pour the cheese sauce over the squash in the baking dish.
Sprinkle the remaining 1/2 cup cheddar cheese on top.
Bake until Bubbly and Golden:
Bake for 20-25 minutes, until the casserole starts to bubble.
Switch to broil for 2-3 minutes until the cheese is golden to your liking.
Serving size: 1/12 of entire casserole
